Susan E. Carlson, Ph.D., is the AJ Rice Professor of Nutrition in the Department of Dietetics and Nutrition and a University Distinguished Professor at the University of Kansas. Medical Center. Carlson received her bachelor's degree in home economics at Washington State University in 1969 and her doctorate in nutrition with minors in biochemistry and physiology from Iowa State University in 1975. She had NIHLB postdoctoral fellowships at the University of Wisconsin in the Department of Pathology (1975-1977) and at the University of South Florida in the Department of Pediatrics (1978-1979). A faculty member in several medical school departments of pediatrics, mainly in divisions of newborn medicine from 1979-1997, Carlson rose through the ranks to professor in the Departments of Pediatrics, Obstetrics and Gynecology and Biochemistry at the University of Tennessee, Memphis, Tenn. Her major research interest during those years was on the effects of fatty acids that compose a large percent of brain membranes and found in human milk but not in vegetable oils typically used in the production of U.S. infant formulas. After moving to Kansas City in 1997, she continued her research on the effects of docosahexaenoic acid (DHA) and arachidonic acid (ARA) on brain development in term infants in collaboration with a team of cognitive and neuroscientists. She also conducted studies of DHA supplementation during pregnancy and infant/child development. Most recently, her group showed that DHA dramatically reduced the risk of early preterm delivery (<34 weeks gestation) and preterm delivery (<37 weeks gestation).

Jen is a UK Registered Dietitian with experience in a variety of sectors including clinical practice, academia and consultancy. She has worked with ketogenic diet (KD) therapies throughout her career in both a clinical and research capacity. Firstly, in acute hospitals in the NHS, specialising in paediatrics and KD therapies. Then academia, as a lecturer and researcher at the University of Nottingham and University of Plymouth and now, consultancy as founder and director of The Keto Dietitian. Jen supports children and adults to undertake medical KD. She is particularly passionate about working with clients and families, supporting them to confidently undertake KD and helping them to achieve optimal outcomes. Jen’s mixed methods research is focused on the outcomes of KD therapy and families’ experiences of epilepsy and KD therapy. She led the development of a core outcome set for childhood epilepsy treated with ketogenic diet for her PhD and is in the final stages of writing up. Jen collaborates on various research projects with colleagues in the Ketogenic Dietitians Research Network where she is a co-publicist. She is a serving member of the Matthew’s Friends Medical Board and research officer for the Paediatric Specialist Group of the British Dietetic Association.

Post-doctoral researcher in BCNatal, Hospital Clínic and Hospital Sant Joan de Déu, University of Barcelona. Dietitian and researcher of the the IMPACT (Improving Mothers for a better Prenatal Care) BCN trial, involved in the dietary intervention based in traditional Mediterranean Diet adapted for pregnancy and PREDIMED (PREvención con DIeta MEDiterranea) Plus trial. Her research activity has been focused on the effects of Mediterranean Diet in different stages of life, such as pregnancy, senior adults and individuals at high cardiovascular risk, particularly the health benefits of the Mediterranean Diet on cardiovascular disease prevention and obesity. Moreover, during her PhD, she design and validated an updated assessment tool for dietary intake specific for pregnant women. Finally, her research was focused of the health benefits associated to specific bioactive compounds of the Mediterranean Diet, such as polyphenols. She published 39 articles in high-impact journals (H-index 11). She participated as a collaborator in several national and international research projects financed by the ISCIII, CIBEROBN, the European Commission, among others, and she is Early Career Scientist (ECS) Representative in the JPI-HDLH FoodPhyt Project.
