Session description: A quality of a diet plays a crucial role in a proper development of the pediatric age group. Therefore, it is necessary to use the most up-to-date nutritional science for a development of dietary guidelines. When discussing the content of saturated fats in a diet the food matrix concept should be considered since the food matrix modifies the health effects of nutrients. The components of a diverse diet are not only saturated fats but also a dietary fiber that is a critical element for infant’s and children’s health and its insufficient consumption has been associated not only with intestinal disorders, but also to some of the nutrition related chronic diseases, such as obesity, type 2 diabetes or cardiovascular diseases. In addition, a proper diet quality is also related to the acquisition, colonisation, and maintenance of the early life microbiota. The state of the art is supporting a strong link between bacterial, bacterial genomes content of the intestinal eco-system and the appearance of some pathological conditions later in life. A central point of the today research is the attempt to establish links among diet, gut microbiota/microbiome composition and health conditions throughout life.
