Dr. Mun'delanji C. Vestergaard is an Associate Professor in the Department of Food Science and Biotechnology at Kagoshima University, Japan. Mun'delanji obtained her PhD from the University of Aberdeen, Scotland. Her research interests include biosensor development; biomimetic membrane systems for understanding biomolecular interactions; nanotechnology-based bioscience and bioengineering; bioactivity of naturally occurring compounds; and molecular sensing at point-of-need. Mun'delanji has published more than 50 papers, 4 book chapters, and edited one book nanobiosensors and nanobioanalyses. She is an editor of Sensors Journal and Frontiers In Sensors.
